Simple, yet absolutely delicious. Chicken breast roasted at 900F on @oonihq wood fired pizza oven 🔥 . . Seconds after closing the door handle, I began to hear the cast iron pan sizzle & pop as the chicken began taking a deep golden brown color from the salt and spice mixture. Through the small opening, I saw the flames engulfed around the pan; the aroma was incredible. I was very impressed with this mighty oven, and can’t wait to fire it up again!

I received a bunch of DM’s after posting this IG story. Everyone wants to know...where did I buy it? What was it seasoned with? How long it was cooked and how they can get it to stay moist? . . Here it is: I get my meats and produce delivered from JD food in Fresno. I’ve been receiving consistent product from them over the course of 2 years . . Second: I seasoned the turkey breast with my own espresso rub, the same rub I season our briskets, pork butts and ribs. It’s truly a perfect rub for everything. While we don’t sell it commercially, I don’t mind sending out samples 😉 . . Lastly, I smoked the turkey breast hot and fast at about 300F for 2 hours. Since they were skin on breast, they developed a nice crispy skin and retained all the moisture. I let them rest approximately 30 minutes before slicing. Maybe I should add turkey breast as a permanent meat option?
